Beskrivning

En frisk och fräsch salladsrätt med räkor, som får fina smaker av avokado, röd peppar, tomat, olivolja, lime och koriander. Rätten är mycket snabblagad och tillagas på mindre än en halvtimme. Smaksätt gärna dressingen med lite honung för extra sötma.

Tina räkorna (om frysta används).

Koka riset enligt anvisningen på förpackningen.

Dela, kärna ur och gröp ur avokadon, tärna den och tomaten. Dela, kärna ur och finhacka chilin. Skala och skär löken i tunna skivor. Blanda allt i en skål.

Hacka koriandern. Blanda den med olivolja och smaka av med hälften av limesaften. Vänd ner dressingen och räkorna med grönsakerna.

Skär resten av limen i klyftor och servera till.

Servera räkröran med riset och salladen.
