Skiva karréskivorna tunt, ca 1 cm. Skär ananasen i kuber (ca 3x3 cm). Blanda köttet med kryddorna och 1 tsk salt (för 4 port), låt köttet ligga i kryddblandningen ca 3 timmar i kylen.

Trä köttet på blötlagda spett. Trä ananas i början och slutet på spetten. Strö över resten av saltet (1/2 tsk, för 4 port) på spetten.

Tänd grillen ca 30 minuter innan tillagning om du använder kol/briketter.

Guacamole: Dela, kärna ur och gröp ut köttet ur avokadorna och mosa med en gaffel. Skala och finriv vitlök och finhacka jalapeño. Blanda med mosad avokado och smaka av med limejuice och salt.

Tillbehör: Skala och finhacka silverlök och hacka koriandern.

Grilla spetten ca 10-15 minuter på direkt värme tills köttet har fin grillyta, är genomstekt och har en innertemperatur på 80°C.

Grilla tortillabröden snabbt så de får lite färg. Lägg direkt i en ren handduk.

Servera spetten och brödet tillsammans med guacamole, hackad lök och koriander.
